Easter Cupcakes


I love making goodies for the little one's class. I asked the teacher if she was planning a party for Easter and if I could please bring something. She hadn't planned on a party, but they would be doing crafts and yes it was okay to bring something. Hurray. Cupcakes it is! Not wanting to load the little munchkins up on sugar I made mini cupcakes to send to school and kept the larger ones for the family. I made them very simple... just a swirl of lightly tinted icing, some pastel green sprinkles and my favourite, a mini egg to finish it all off. They looked adorable on the plate and the kids loved them!

The large ones that we kept I put mini eggs and a little pipe cleaner chick as the decoration. My daughter liked them so much she begged us for our chicks so she could have a chick family in her bedroom.

School Treats Made Fun

It's been a while, but I'm back. It's spring break for the little one right now so I've been doing my best to fill our days with playdates and fun outings. We spent the weekend on the Island visiting family... it was fun except for the rain/snow/wind. Ick.

Last month the little one's class had a 'Heart healthy' Valentine's party. I signed up for a fruit plate because it was the only thing I could think of that I could easily make into something a little fun. This was the result:

These were really easy to make. I bought small bamboo skewers and just threaded the fruit onto them. The strawberries were dipped in melted white chocolate and drizzled in rainbow sprinkles. I had never done these before, but will definately do them again. They were a huge hit with the kids, the little one said some classmates were asking for more. I bet the kids would of liked them even if they didn't have the chocolate and sprinkles on the top because a fruit kebab is way more fun then plain old chopped fruit.

I think I might make these as party staples from now on. Anyone else have any fun ideas for kids food?

I Finally Did It! and Yummy Corn Chowder



Join the net land of blogging that is. After years of following a few chosen blogs I have finally decided to join in. Why? I'm restless, mainly. I need an outlet and until the spare bedroom gets cleaned up and I can freely sew and generally 'create' this will do.

And so, to start off my new adventure I leave you with a delicious corn chowder recipe that can be made in the slow cooker. Mmmm, it's so yummy on cold winter days!

CORN CHOWDER
2 cups corn kernels
1 cup diced red potatoes
1 sweet red pepper, diced
1 small red onion, diced
2 tsp. Cajun seasoning
1/4 tsp. pepper
6 cups chicken or vegetable stock
2 tbsp. each of butter and flour
1 cup whipping cream

In slow cooker combine corn, potato, red pepper, onion, half of the Cajun seasoning and the pepper. Stir in stock. Cover and cook on low for 6 hours or until vegetables are tender. In small bowl, stir together butter, flour and remaining Cajun seasoning. Stir into slow cooker, making sure that flour does not lump. Stir in whipping cream. Cover and cook on high for 20 min. or until slightly thickened. Ladle into bowls and enjoy!
